Healing Raw Vegan Tacos

Super yummy Healing Raw Vegan Tacos! I made them for my dad today who has been recently diagnosed with Colon Cancer with Liver Metastases. I put him on a very strict diet, free of animal products, sugars, refined flours, oils and many other ingredients I can’t even list…

He drinks 3 juices a day, 2 shots of wheatgrass and one of blue green algae, a bunch of natural supplements such as Reishi mushroom and turmeric capsules, and two meals that consist in 80% raw food and 20% cooked food.

This is a good example of a clean meal, perfect for him. It contains no oils, salt, fruits, soy or cashews, and it is full of love. ❤️

Ingredients:

Tomato-free Pico de Gallo

1 red pepper, diced
2 sweet orange peppers, diced
1/2 small onion, chopped
Juice of 1 lime
fresh cilantro to taste, chopped

Nut and Mushroom «meat»

Handful of almonds
Handful of walnuts
Handful of shitake mushrooms
1 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Pinch cayenne
1/2-1 teaspoon aminos

Guacamole

1 avocado
1/4 onion, chopped
Juice of half a lime
1 tablespoon cilantro chopped

Tahini dressing

2 tablespoons Tahini
Juice of 1 lemon
2 tablespoons water
1 drop of stevia

Procedure:

Tomato-free Pico de Gallo

Combine all ingredients in a bowl.

Nut and Mushroom «meat»

1. Slice mushrooms and place them in a fry pan with 1-2 tablespoons of water. Let it cook for a minute or until soft.
2. Remove from stove and let them cool for a few minutes.
3. In a food processor place cooked mushrooms, walnuts and almonds. 4. Add spices and aminos, and process for a few seconds to chop and combine.

Guacamole

In a bowl mash avocado with a fork and then add onion, lime juice and cilantro.

Tahini dressing

Blend all ingredients together until smooth.

Assembly

1. Place about 1 tablespoon of the «meat» mixture on top of a romaine leaf.
2. Then add 1/2 tablespoon of guacamole and 1/2 tablespoon of Pico de Gallo.
3. Finally drizzle a little bit of tahini sauce on top.
4. Serve at room temperature and enjoy outdoors!
